用料
  • 蒜苔 1把
  • 猪肝 400克
  • 小米辣 2个
  • 葱 1段
  • 姜 2片
  • 蚝油 1勺
  • 生抽 1勺
  • 老抽 半勺
  • 鸡精 1勺尖
  • 胡椒粉 1小勺
做法步骤

1、蒜苔摘好,洗净切段备用

2、葱切葱花,姜切丝备用

3、猪肝放到盆里,先清洗一下

4、将猪肝切片

5、加入一小把淀粉,加清水抓洗干净

6、再用清水反复抓洗,直到洗猪肝的水变清澈为止 * 洗好的猪肝,沥干水分备用

7、将猪肝放入盆里,加入盐,胡椒粉,玉米淀粉抓匀腌制一会

8、起锅烧水水微开时,关火下入猪肝,将猪肝养熟

9、将猪肝捞出,沥干水分备用

10、起锅烧油,下入花椒大料煸香

11、加入葱姜爆锅

12、下入蒜苔编炒

13、下入猪肝

14、加入料酒

15、加入蚝油,生抽,老抽,食盐

16、加入鸡精,小米辣,翻炒均匀,出锅即可

小贴士

1.我这里用到的是水滑方式来滑炒猪肝,要注意水温,不要全部沸腾时下入猪肝否则猪肝容易老。水微开时立刻关火,再下入猪肝慢慢养熟。 * 2.也可以用油滑的方式,油温三成热时下入猪肝,变色立刻捞出沥油备用。 * 3.道菜属于急火快炒菜,下入猪肝后,一定要快速翻炒,否则猪肝容易变老变硬,不好嚼。
