炒蒜薹的家常做法

天气炎热,大家都没有胃口,而且细菌、蚊虫还比较多,建议大家多吃些夏季大量上市的蒜薹。蒜薹含有蒜辣素,可以刺激胃酸分泌,增进食欲,促进消化;还含有大蒜素等天然杀菌素,可以杀菌杀虫,提高免疫力,帮助我们顺利度过夏天。

今天给大家分享几道好吃的蒜薹做法,做法简单,营养又开胃,好吃不腻,老人孩子都喜欢。

一、蒜薹炒鸡蛋

准备蒜薹、胡萝卜、鸡蛋、干辣椒、豆瓣酱、酱油、蚝油、食用油。

1、蒜薹掐头去尾,洗干净后切成碎末。胡萝卜去皮洗干净,切成碎末。干辣椒切碎。鸡蛋打入碗中,加入适量食盐、料酒搅拌均匀,再倒入适量清水搅匀,这样鸡蛋口感很滑嫩。

2、碗里加入一勺豆瓣酱、一勺酱油、半勺蚝油、半碗清水,用筷子搅拌均匀。起锅烧油,八成热时倒入鸡蛋液,大火煎熟后盛出。锅里留底油,放入干辣椒爆香,倒入蒜薹、胡萝卜,大火翻炒至熟透,倒入料汁煮3分钟,倒入鸡蛋块翻炒均匀,即可出锅。

二、蒜薹炒腊肉

准备腊肉、蒜薹、红辣椒、食盐、食用油、酱油。

1、腊肉洗干净,放进锅里加入清水,大火煮开后小火煮20分钟,能用筷子扎透后捞出晾凉,切成薄片。腊肉煮一下口感会比较软嫩,而且没那么油腻。

2、蒜薹掐头去尾,洗干净后切段,干辣椒切丝。起锅烧水,放入一勺盐,倒入蒜薹煮2分钟,断生后捞出过凉水,沥干水分备用。

3、起锅放油,五成热时倒入腊肉片,小火煸炒出油,颜色透明后放入辣椒丝爆香,倒入蒜薹大火翻炒一会儿,加入适量酱油、食盐,淋入适量清水,翻炒均匀后即可出锅。

三、蒜薹炒肉丝

准备里脊肉、蒜薹、小米椒、食盐、淀粉、料酒、酱油、黑胡椒粉、鸡精、食用油。

1、蒜薹洗干净切小段,小米椒洗干净切斜片。里脊肉洗干净切丝,加入适量食盐、酱油、料酒、黑胡椒粉、淀粉、食用油,用手抓拌上浆,腌制10分钟。

2、锅里倒入少量油,下入蒜薹太火翻炒一会儿,颜色变深后盛出备用。锅里重新放油,六成热时放入腌好的肉丝,大火滑炒散开,变色后倒入炒好的蒜薹,加入适量食盐、酱油、鸡精,撒上小米椒,翻炒均匀后即可出锅。

四、蒜薹泡椒炒鸡胗

准备鸡胗、蒜薹、泡椒、生姜、料酒、生抽、食盐、白糖、食用油。

1、鸡胗加入料酒、啤酒抓拌均匀,浸泡半小时,把脏东西都洗掉,冲洗干净后沥干水分,切成薄片。鸡胗放入碗中,加入食盐、生抽、料酒腌制20分钟。

2、蒜薹洗干净,切成碎丁,生姜切末,泡椒切碎。锅里加油烧热,放入姜末爆香,倒入泡椒炒出香辣味,倒入鸡胗大火翻炒至变色,加入适量食盐、生抽、白糖调味,倒入蒜薹继续翻炒2分钟,入味后即可出锅。
